64. FABRICE BOUTELOUP. (NEW)

His year: Classically-trained French-born chef/patron Fabrice Bouteloup and his Scottish wife Alison, a wine expert, opened restaurant-with-rooms Barley Bree in Muthill, near Crieff in 2007. This year, they took the Rural Restaurant of the Year and Scottish Restaurant of the Year titles at the annual Scottish Restaurant Awards. It was also named one of The Guardian’s 10 best destination restaurants in Britain. Fabrice is also celebrating 20 years of working in the UK, mainly in Scotland. His motto is: Every customer is a VIP.

PANEL VIEW: Scotland’s newly invigorated restaurant culture is making its mark not only within our own borders but further afield and the rise and success of venues like Barley Bree, with its Auld Alliance fusion of Scottish produce with French flair, shows the mix of talent and imagination that is titillating the tastebuds of regulars, aficionados and visitors alike.
